Another one from my favorite cookbook "The 30 Minute Vegan." This is incredibly simple. The book says it serves 8-10 people but My hubby and I practically ate the whole thing ourselves.

Orange-Beet Soup

From the cookbook The 30 Minute Vegan. It's similar to a borscht but not as heavy. It can be served hot or chilled. Recipe serves 6.

Quinoa Pudding

This is mostly my friend's recipe, but I used oat milk (instead of soy). Use it instead of rice pudding.

Vegan Rainbow Kale Salad

This recipe comes from the cookbook "The 30 Minute Vegan" page 138.

Vegan Pepper "Steak"

From the book "By Any Greens Necessary" by McQuirter. The only change I made was substituting Penzey's salt free spice for Spike seasoning because Spike is high in sodium.
