Meringue swirls

Preheat oven to 200. Line baking sheet with parchment. Combine egg whites, sugar and 1/2 vanilla bean seeds in heat proof bowl. Set over simmering water and cook until sugar is dissolved. Add pinch of salt and pinch of cream of tarter. Beat with a mixer on high speed until stiff glossy peaks form beat in 1 tsp orange zest.
Using a paintbrush, paint 3 vertical stripes on the inside of a pastry bag. Pipe small circles onto baking sheets. Bake at 200 for 1 hur and 15 minutesTrimethylaminuria, that you might look up as well.

Ginger-scallion sauce

2 cups thinly sliced scallions, both green and white parts
cup peeled, minced fresh ginger
cup neutral oil (like grapeseed)
1 teaspoons light soy sauce
1 scant teaspoon sherry vinegar
teaspoon kosher salt, or to taste
