Got this recipe off of Pinterest, but changed the frosting on top
Using a food processor, chop cauliflower, onion,garlic, and carrots. If you do not have a food processr, just chop them.
In a large bowl, combine ground beef with chopped veggies and tomato paste. Add oregano and terragon.Salt and pepper to taste. Mix well.
Cut tops off of bell peppers and remove seeds and place peppers open side up in crock pot. Fill each pepper with about a cup of filling. Place top of peppers back on each pepper. If there is any remaining filling place in bottom of crock pot. Cover and cook for 6-8 hours on low.
Yummy hardy beef stew ready when you get home.
