This is a really good veggie pizza with a different spin. The original recipe doesn't call for corn or mushrooms but I had them so I threw them on! It gets piled REALLY high and fills you up! You could put a little taco sauce on top for more flavor if you want.
I am the type of person who typically hates the flavor of protein powder BUT you actually can't taste it in these and they are really good! I was shocked because I went to eat it KNOWING I wouldn't like it...BUT I did! YUM!
I make this soup all the time. If you have extra's just freeze them. It's all natural and really healthy. If you choose not to add taco seasoning packets you could always use chili powder and cumin. Also adding garlic would be good too. Serve with light cheese, sour cream, and tortilla chips if you like. Just not too much!
