Loggerhead Sea Turtles

During late spring and summer, female Loggerhead Sea Turtles leave the ocean only to lay eggs.

After dragging herself up onto Edisto Beach, she hollows out a pit with her back flippers and deposits an average of 100 eggs the size of ping pong balls.

When the last egg is laid, she covers the eggs with sand and flings more sand about with her flippers to erase any signs of the nest.

After about two months, monitored closely, the hatchling turtles emerge at night to go back into the sea.

Taladega, Alabama

Talladega Superspeedway

Talladega Superspeedway is a motorsports complex located north of Talladega, Alabama.

It is located on an old abandoned airfield just outside the small city of Lincoln.

It was constructed by International Speedway Corporation, a business controlled by the France Family, in the 1960s.

Talladega is most known for its steep banking and the location of the start/finish line which is closer to turn one than at Daytona International Speedway.

Dutch Oven Buttermilk Cowboy Coffee Cake

This is a tried and true recipe from "Everyday Dutch Oven".

Use a 12 inch dutch oven lined with parchment paper. It takes about 30 minutes to bake with 10 coals in a ring around the bottom and about 20 on top. Rotate the oven halfway through and check to make sure the cake isn't browning too quickly and move a few coals from the center of the lid to the outside during the last 5 minutes of cooking time.

North American & Southern Native American Staple Foods

Other staple food are: Quinoa which is a variety of amaranth and sumpweed or marsh elder.

They also grew barley, maygrass, sunflower and foraged for mushrooms.

They harvested seafood, fish, oysters and salmon. And kept live stock like pigs.

They hunted wild game, boar, deer, duck, opossums, pheasant, quail, rabbit, raccoon, squirrels and buffalo.

These were all staple foods for the Western Native Cultures.

And all parts of the animal was used including chitterlings, which are fried large intestines of hogs, pork brain and eggs and livermush made from hog liver.

North American & Southern Native American Staple Foods

The staple foods for Native Americans are the combination of corn or maize, beans and squash which were called 'The Three Sisters".

Most every meal contains at least one or all three of these foods.

Native people planted the three plants together such that the beans grew on the tall stalks of the corn, while the squash formed a ground cover to protect the plants from weeds.

They grew corn or maize, for hominy and dried it to make corn meal. Flour for bread was made from dried, ground acorns.

They had plantations and grew potatoes, pumpkins, beans, tomatoes, peppers, sassafras, muscadines, blackberries, raspberries, other wild berries and wild onions.

Japanese Adzuki & Matcha Green Tea Cake

Adzuki beans or Red Beans are very popular as a dessert item in Japan.

Adzuki Bean desserts are not as sweet as our American desserts. We love sugar and do not consider this high protein treat as highly as it's health benefits deserve.

Use a mixture of Splenda and granulated sugar to bring it to a sweeter taste if you desire.

Native Americans carried dried Acorn Cakes, Pemmican, shredded meat and or soups on journeys.

Substituting the granulated sugar with Splenda- Sugar Blend for Baking will lower the calories.

This Is How I Roll ~ Without a Sushi Mat

Rolling sushi with parchment paper, waxed paper, aluminum foil or a sheet cut from a paper grocery bag is a bit harder than using a mat, but keep trying.

1. Spread your sushi rice evenly onto the nori. Covering the entire sheet, leaving a half inch on each end so you can seal the roll after you get it hand rolled.

2. Add the ingredients to the roll. Put the ingredients on the nori paper closest to where you are going to start rolling from.

3. Using two hands, begin to roll the roll away from you going very slow until you get to the end of the roll, ensuring the roll is staying tight.

4. When you get to the end of the roll, apply water to the half inch of the nori you left without filling and seal the roll shut.

5. Use a sharp knife to cut the sushi into serving pieces.

6. Arrange on a plate. Cover with plastic and refrigerate until ready to serve.

8. Serve the sushi with accompaniments

Serve the sushi with a small bowl of shoyu (soy sauce) for dipping, extra wasabi for those who like their sushi extra hot, and slices of gari (Japanese pickled ginger) for cleansing the palate between sushi pieces. You can eat sushi with your hands or with chopsticks.

Wild Mushroom Risoto

I love this Risoto recipe!

Deep Fried Turkey ~ Fat Free Orange Marinade

Fresh orange juice is a fat free, natural meat tenderizer. It will make your turkey moist and very tender on the inside and the deep frying will make it crispy on the outside.

1c Orange Juice, fresh
1c Lemon Juice, fresh
1T Sage
1T Ginger
1T Garlic Powder
1T Tabasco Sauce
1T Cayenne Pepper

Combine all ingredients in a blender. Blend on high until the mix is a smooth liquid. Inject the turkey with the marinade sauce. Place the whole turkey and the rest of the marinade into a large plastic bag. Seal the bag and refrigerate overnight.

Drain and discard the marinade when it is time to cook. Pat the bird dry and season with salt and pepper. (cont...)

This is the classic marinade solution that is injected into the meat of turkeys which are deep fried Cajun style.

The secret is to inject the flavors inside of the meat so that the hot oil can't wash them off.

1 c Lemon Juice
1/2 c Liquid Crab Boil
1/2 c Olive Oil
1/2 c Butter
2 T Onion Powder
2 T Garlic Powder
2 T Cajun Seasoning
1 t Tabasco
1 t Cayenne Pepper

Shake all ingredients with ice.

Rattlesnake Bites

So, you are looking for something you can cook over an open fire while out on the trail? Well, why don't you try a little rattlesnake for your dinner by the camp fire?

Buy the meat already dressed. Please don't try to hunt one of these bad boys down just to see what he tastes like.

I read that rattlesnakes can still bite you after it has been dead for over an hour. So, if you do hunt one down, chop the head off and dispose of it immediately.

Menudo Rojo (Tripe Soup)

This is a very easy and inexpensive recipe to make!

Roasting your peppers will give them a richer level of flavor. This recipe uses De Jarbol and Japones Chile Peppers. Just grill or broil for a few minutes and let them char a little bit to add a smokey flavor to your dish. Enjoy!

Roasted Wild Boar Leg

Slow Roast or Crockpot overnight or roast in your Dutch Oven at the campsite!

Your choice. Either cook your wild boar leg in the oven at a low temperature for several hours.

Or brown it on all sides in a large cast iron skillet, place in a a slow cooker with a can each of Onion Soup, Mushroom Soup and water.

Hog Head Cheese - Souse - Down Home Recipe

I come from a family of farmers. My Grandparent's used almost every part of the hog that they butchered including the head and ears.

This is the closest recipe that I could find that resembles my grandmother "Bigmamma's' old family favorite Hog Head Cheese or Souse.

Collards & Ham Hocks ~ Down Home Recipe

We grew up with Ham Hocks and Collard Greens!

Beaufort Boil Party ~ Melted Butter Sauce

(12 Servings)
2 Sticks of Unsalted Butter
6 Garlic Cloves

(25 Servings)
4-6 Sticks of Unsalted Butter
12 Garlic Cloves

In a sauce pan, melt butter and the peeled garlic cloves over medium heat. Simmer for 3 to 4 minutes. Remove from the heat and discard the garlic cloves.
Serve hot immediately. Serves 12 - 25

Beaufort Boil Party ~ Shrimp Cocktail Sauce

1 c Ketchup
1/2 t Splenda
1 t Salt
1 t Black Pepper
4 t Lemon Juice 4 tsp
1/8 t Tabasco Sauce
1 t Worcestershire Sauce
4 Garlic Cloves

Mix together the ketchup, Splenda, salt, pepper, lemon juice, Worcestershire and Tabasco Sauce to the bowl. Finely chop the garlic and add it to the bowl. Mix well and chill before serving. (cont...)

Beaufort Boil ~ Traditional Gullah Seafood Recipe

The "Beaufort Boil" originates from the rich native Gullah people who still live on the sea islands near Beaufort, South Carolina.

Who knew that boiling a pot of shrimp, sausage, potatoes and corn on the cob would become so popular that it is now considered South Carolina's version of the "Backyard Barbecue" .

Frog Legs- Down Home Recipe

"Do frog legs taste like chicken?"

No. Cooked right, they have a naturally tangy flavor, smokey, tender, juicy and delicious!

Frog legs are an exotic Cajun delicacy from South Louisiana.

Grill over a very hot flame a few minutes. Frog legs have no fat. Overcooking or cooking too slow makes them dry and tasteless.

Fish them out of the bayou or contact Church Point Wholesale online for premium quality, cleaned, quick frozen legs.

~34~ Wine & Cheese Party- After Dinner

After Dinner

Repeat the same process for sampling the wine and cheese pairs as you did before dinner.

The third wine and cheese pair will be a softer cheese and the fourth pairing will usually be a desert wine and it's complimentary cheese.

After folks have sampled the last cheese, they may or may not want to finish the evening with a small slice of cake or pie.

Plan for the desert wine to compliment what ever desert you serve too.

Bring out your tray with a pot of fresh coffee, creamer and sugar bowl. Serve desert and coffee to finish off the evening.

Remember to send out "Thank you for coming to my Wine & Cheese Tasting Party" cards the next day.

Talking about too good to be true?! This salad contains plenty of fiber. Healthy oils from the avocados. A nice dose of Vitamin C from the kiwis and lime. And protein, copper and B vitamins from the pistachios.

Afternoon Tea Party- High Tea

"High Tea" also called "Meat Tea"

This is a late afternoon tea served with meat and vegetable dishes.

The menu is more generous.

Offer a generous tray of different types of sandwiches, Mini Crab Cakes, Bruchettas, Fruit Salads, Quiche, etc...

Serve warm breads, biscuits, scones with Creme Fraiche and fresh Strawberries, serve Devonshire Cream, Pecan Honey Butter and other flavored butters.

Serve Desert with the second cup of tea.

Offer any favorite desert: cakes, an English Trifle, puddings, pies, cheesecakes, etc...

Afternoon Tea Party - Royal Tea

"Royal Tea" has the fullest menu. It is served late afternoon after the family comes home from work.

A choice of teas, 2-3 meat dishes, potatoes, vegetables, green salad, fruit salad, sandwiches, Crab Cakes, Quiches, etc...

Warm Banana or Zucchini Bread, Scones, Tea Cakes, etc... Creme Fraiche, Devonshire Cream, Strawberry Preserves, Honey and other flavored butters.

Elegant deserts served with the second cup of tea.

And then, it is all followed up with a glass of champagne or a glass of sherry at the very end of the meal.

Afternoon Tea Party- Your Beautiful Table!

Preparations: The Day Before

Plan your table.

Shop for groceries.

Pick out flowers for your table.

Wash and/or iron table cloth.

Plan your table so that the teapots and platters are in easy reach of of each guest.

Plan for each guest to have a cup, saucer, plate, spoon, napkin, small fork for eating cake and butter knife for spreads.

Have extra utensils and napkins ready for unexpected guests.

Afternoon Tea Party- Sandwiches Can Be Made On The Night Before

Prepare sandwiches. Make extra for unexpected guests.

Most sandwiches can be refrigerated over night, place them flat on a cookie sheet, cover with slightly damp paper towels and wrap the whole platter tightly with plastic wrap.

Wash teapots and dishes.
Set up individual trays with a teapot, milk and sugar bowl. Place each tray on a counter close to the kettle in the kitchen.

Afternoon Tea Party- Your Tasty Menu!

With the first cup of tea, serve a generous tray of sandwiches: Chicken, Egg, Avocado & Shrimp Salad, Cucumber, Smoked Salmon, Goat Cheese & Watercress.

Finger foods, little sides like: Cheese, Smoked Almonds, Crab Cakes & Quiches, Crostinis and Bruchettas.

Warm freshly baked bread, Scones, Biscuits, Muffins & Tea Cakes. Spreads warm breads with Creme Fraiche, Devonshire Cream, Honey Butter and top with fresh fruit and Strawberry Preserves.

With the second cup of tea, serve any favorite desert, a lovely pound cake, cheese cake, fruit tart or cupcakes.

Informal Tea Parties are fun. Guests pour their own tea and help themselves to whatever they want to eat.

And you can use several teapots and offer a variety of teas to your guests.

Except for the "Elevenses", Afternoon Tea is served between the hours of 3:00-6:00pm.

The later the hour determines the amount and type of foods served.

Papaya Fruit Cup

Grade B maple syrup really is the secret ingredient. The dark color gives it an extra caramelly flavor. Grocery stores carry it, but if you can't find it, Grade A will work just fine too.

"Chitlins" or Chitterlings are the small intestine of a hog. My NA Grandfather was a hog farmer and he used every bit of the hog he could.

Cooked properly it is a fine meal. Use potatoes to absorb the smell of the chitterlings while cooking.

Fried Green Tomatoes- Taditional Cherokee Native American Dish

Many southeastern foods are adapted from the native tribes. Some of the Cherokee dishes are fried green tomatoes, greens or ramps, cornbread, hoecakes, bean bread, many peanut dishes.

Fried Hominy - Traditional Tsalagi (Cherokee) Native American Dish

Cherokee first settled in southeastern North American between A.D. 1000 and 1500. Cherokees referred to themselves as "the Real People" or "the Principal People", which in their language is Ani-yun'wiya' .

Sassafras - Traditional (Ga-Na-S-Da-Tsi) Native American Tea

Natural food stores carry Sassafras Root in a dried form. It will resemble wood chips. Sassafras tea may act as a diuretic, reducing excess water weight and swelling.

Deer, Elk & Moose Steaks - Traditional Native American Dish

Wild meats tend to have a "gamey" flavor. You can reduce that taste by skimming away all excess fat.

You can grill or pan fry your streaks.

Roast Goose & Stuffing
