Quinoa with Toasted Sliced Almonds and Dried Cranberries

Our favorite quinoa (keewah) dish. Nutty and a little fruity. Unlike wheat or rice, quinoa is a good source of lysine. It is also gluten free and has more fat than most grains. Store in refrigerator.

Bulgar Pilaf, Turkish Style

This is my adaptation of a Turkish side dish, Bulgur Pilavi. Excellent side dish with all kinds of meat dishes, particularly lamb.

Nancy's Made Up Turkish Meal

This is my version of a meat sauce to pour over rice. The sauce is also used as a base for something called "steam kebab," a Turkish recipe that is a favorite in my family.

Tangy Bean Salad with Carrots, Tomatoes & Parsley

This mildly tangy bean salad is delightfully refreshing, high in fiber and protein and relatively low fat. Great for lunch in whole wheat mini pita (to which I add thinly sliced avocado and mild provolone cheese). My husband loved this! I only eat half a mini pita. Note serving size for the bean salad is calculated for 4.


Beat Up Chicken Breast with a French Twist

Our favorite chicken recipe, served over bow tie pasta (preferably whole grain pasta, of course!). Beating the chicken breasts helps make them more tender. I buy large chicken breasts and can only eat half of one, but the serving size and nutrient information listed is a for a whole breast.

My recipes benefit from using fresh organic ingredients. They tend to be lower in fat, higher in fiber & protein. Some of my favorite recipes are adaptations of Turkish recipes. These will take longer to prepare or cook, but well worth the effort!
