Green Bean, Caramelized Onion and Blue Cheese Salad
I found this recipe in the Forks Over Knives Cookbook. I then made a few changes to it by adding other vegetables such as the sugar snap peas to it.
A Weight Watcher's Dish that we love but changed up a bit for our own nutritional goals (less meat and more veggies) - we reduced the amount of meat and doubled the amount of broccoli rabe. And I cube the chicken to mix into it.
Also, very good as left overs.

Serving size - approx. 3 oz. of chicken
Brush on last minutes of cooking.
Great on steak, turkey cutlets, chicken, or salmon
Italian sausage & peppers & onions in tomatoes.
