This recipe is my makeover of a salad served at Pickles Cafe in Dunfee, Indiana during Cowboy Days in July 2011.

This is a crockpot recipe. It's high in vitamin C and very low cholesterol and carbs. No tomato sauce, no egg, no bread.

This is an Eastern European classic.
This makes a very nice soup for two if you cut the ingredients in half. Add bacon bits when serving if desired.
