Basic Spaghetti Squash ~ No water used.

This is my recipe for making spaghetti squash which I use to replace spaghetti noodles, but I also use it as a base for some vegan meals. The photo is from a hybrid squash.

My Corn Tortillas

I modified this to no oil as it doesn't actually need any.

Spaghetti Sauce

A low sodium low fat spaghetti sauce. I rinse the hamburger under hot water to get more fat off it.

Scrambled eggs, kale and potatoes

My dad cooked these for me from leftovers and are now a favourite. I modified this recipe using one egg. I modified it a 3rd time using kale and cooking in olive oil or coconut oil. Calorie tracker is using olive oil.

Chicken Parmesan Casserole

This is a great recipe to use up leftovers. I mainly use chicken, but have also used turkey. I switch up the vegetables, use any kind that you like.

Krispy Kale

I use this in place of lettuce in my tacos. **Updated olive oil or coconut oil, recipe is currently calculated with olive oil

Mini kale artichoke frittatas

I use coconut oil to line the muffin pan.
Edit #1 changing from 4 eggs + 2 egg whites to 2 eggs + 4 egg whites.
Edit #2 Added more kale and more non fat milk

Mashed Beans

This is my version of re-fried beans, healthier option. I do not do spicy, but you can add pepper flakes, chili powder etc to this and it will still be low fat.
