CharityCyclist's 'Cream' of Potato & Onion Soup

Blending some of the potatoes gives this soup a heartier texture & creamy appearance without any added cream/dairy. A good slow cooker recipe too.

Roasted Red Pepper Hummus ala Coach Nicole's version

I added some roasted red peppers to Coach Nicole's very good hummus recipe. The red peppers are very 'wet' so thinned the hummus quite a bit so I had to add more chickpeas just to thicken it up. Next time, I might omit the water. The peppers give a nice sweet flavor to the hummus.
Also, I start with beans that I've soaked overnight & cooked. You could get a slightly smoother texture if you had the fortitude to 'skin' the chickpeas. If you cook them from their raw state, this will become clear.

Slow Cooker Beef Stew with Cumin & Coriander

The cumin & coriander give this stew a South East Asian flavor that I love. As with any slow cooker recipe, throw everything in the pot, turn it on & leave it alone.

Flaxseed, Wheat & Bran Muffins variation
