This soup is GREAT! Low in sodium, high in fiber, lots of postassium, and neglible fat. Filling and nutritious. Try it chilled, too!
This recipe will soothe your craving for cool, creamy coleslaw on a summer day, or any day! Rich tasting, but vegan, lo-cal, and so easy to make. You can even substitute agave for the sugar, or leave it out!
Creamy and delicious; a great soup for cold weather, and easy to vary. I used garlic chips, sea salt and cracked black pepper to get more bursts of flavor. You can also make this lower-sodium by subbing in low-sodium cheese (although it's hard to find low-fat cheese that is also low sodium, and I don't recommend fat-free cheese, because a little fat really satisfies; just cut the amount if you're wanting to cut calories and fat).
This is a great vitamin booster; it's raw energy in a glass. And it's sweet, too!
