Heritage Chicken and Home-made Noodle Soup

Walking into into Grandma's house after an 8 hour was like walking into heaven. She made the best pot of chicken soup I've ever eaten and I can still smell immering on the stove. I was fascinated by Grandma making the noodles right on the counter with NO Bowl! We would sit around the table talking for hours wondering when that wonderful goodness was going to be ready. There's still nothing like home made noodles from scratch and so easy!

Carrot Cake

This wonderful cake gets better with age so don't be afraid to make it a day or two in advance. You can slice it and freeze it for treats later too.

Lentil and Kale Soup

On a cold winter's night nothing warms the belly like a big bowl of hearty lentil soup filled with goodness.

Chana Masala

This gets better the longer it sits so make it up ahead of time. I put it in mini whole wheat tortillas for appetizers-tastes great at room temperature.

Grilled Butternut and Roasted Red Pepper Soup

Wow.. this is the creamiest delight for a fall presentation! Put a dollop of Greek Sour Cream on top for the perfect Bite. Featured recipe on the Cook's Tour Sept 2011.

Princess Oatmeal

This is my favorite way to eat oatmeal. I just freeze it in small batches, re-heat for 1 minute and pour Soy Milk over the top. Stir and imbibe!

Lentil Salad Ala Julie

I make this for family picnics 2 days in advance and it holds beautifully. The flavor is enhanced with time and the sweet crunchy vegetables just keep you coming back for more.

Lentil/Walnut Spread

Lentils are IN! A simple make ahead appetizer that is refreshingly easy to make and will wow your guests as they sample lentils in a way that is sure to please them.

Tilapia En Popiette

Tilapia baked in individual parchment pouches - easy and quick! Break open your own packet and breathe in the heavenly aroma of fresh herbs and spices delicately balanced to allow for this mild fish to shine through.

Spicy Orange Hummus

Wow, Hummus like you've never tried before! Rich spices that tease the tongue and a beautiful orange color soothing to the eyes. A perfect afternoon snack on veggie sticks or pita chips.

June's Smoked Salmon Daisy

Savory smoked Salmon on a wedge of toasted italian herbed tortilla is sure to be the crowd pleaser at your next party. Add to that how easy this is to make and you'll have time to chat with your guests!

Warm Caramel Apples

Mouth watering Fuji apples are my favorite in this delicious dessert - rich caramel with a touch of pecan to make you wish for more!

Penne Pasta with Italian Turkey Sausage

Flavorful ground turkey and penne noodles steeped in a savory italian tomato and basil sauce finished with sweet french style green beans. A lovely, warm meal that takes 20 minutes and is perfect on a cold night all in one deep dish pan for easy clean up!

Chef June's Favorite Foods
This is a collection of my favorite foods that have helped me lose 30 pounds in 2010. As a Le Cordon Bleu Chef, this wasn't an easy task. I couldn't have done it without my favorite foods and I didn't want to! Lasagne, Crab Linguini Alfredo, and Pizza - who would want to give those up?
