chocolate muffins - with lots of vitamins instead of calories!

I'm not going to lie: these taste a little like health food. Because they are made with beets. You could probably cut back on them and increase the water (or omit them altogether), but that's where most of the vitamins come from. If you are sensitive about things that "taste healthy," these probably aren't for you. Otherwise, the beet taste is subtle, and they're very rich, moist, and chocolate-y. An incredibly nutritious and guilt-free way to satisfy that sweet tooth.
