A delicious stand-by soup for the slow cooker, but tweaked to be meatless.
My grandmother's vegetable soup with ground turkey taco meat added for more flavor. Obviously, the meat can be omitted for a vegan/vegetarian meal.
I mix this up every morning after my walk.
Found this recipe in the 90's and have tweaked it over the years to suit the tastes in our household. This is our favorite version.
