I altered this recipe from the Gajar Matar recipe I found in 'The Food of India: A Journey for Food Lovers'. Peas=Matar but I use whatever vegetables I'm in the mood for.
We roast our veggies on a charcoal grill. The veggies can also be roasted in the oven, but I have not done this. I chop using a food processor. My SIL in Libya uses a food mill. You need to be able to chop soft veggies to a very fine dice.
A recipe from my MIL. Traditionally served with bread to dip it out of shallow bowls. Any meat can be substituted for the chicken. Lamb is as commonly used in Libya as beef in the USA.
