I decided to try my hand at Kettle corn, I love kettle corn but it's expensive. This is going to be a once a week treat I think. I am going to be tweaking the recipe until it's just right. I think it needs MORE corn.

This started as a Spanish rice casserole and then inspiration hit :) I froze half of it to use for another day.
Makes 16 2/3-3/4c servings depending on amount of liquid added.
These happened in the kitchen the other day.
I wanted chocolate desperately!! BUT I wanted something healthy too. This was my compromise.
You can make breakfast s'mores by adding a few marshmallows and microwaving for a few seconds. My kids loved it! :)

Hubby was helping in the kitchen that day, I recommend using less cheese but he wouldn't let me! ;)
We had an abundance of cherries and chicken and this happened one day in the kitchen. :) I also think that a serving is closer to half a piece of chicken but this recipe is based on a whole piece per person.

I love poppyseed dressing and have a hard time finding brands that are affordable and that don't use unhealthy ingredients. I made this with things that I had on hand at home. I am sure you can make it with splenda and fat free mayos if you choose but I didn't have them on hand. :) This is just like Marzetti's and Krafts Poppyseed Dressing but not as thick so it goes farther. Each serving is a little more than 2 Tablespoons.

It has the same texture as store-bought but with all the wholesome goodness of whole wheat and you can alter the types of wheat too! You can use spelt or hard white wheat or hard red wheat. I make mine with a mix of white and red and my picky picky daughter says "it tastes like it came from the store!" This is the HIGHEST compliment given to me! :)
This bread is perfect for anything from PBJ to grilled cheese! And it's hearty enough to help you feel satisfied.
You can omit the oil but make sure you oil your bowl and the bread pans!

There’s nothing better than a good cup of split pea soup on a cold winter day. Now your soup can cook itself in the crockpot with this simple recipe.
A healthy alternative to other not so wholesome cookies. I use white whole wheat flour that I get from local Amish bulk stores. King Arthur also makes a white whole wheat that you can find at larger stores.
My husband makes these on Friday mornings. He got the recipe from Kingarthurflour.com. We use olive oil and that is what the nutritional analysis reflects. I do NOT care for waffles but I could live on these quite happily.
A crispier crust and made with less than half whole wheat flour makes this a BIG favorite with my picky little eater! And the best part is that it's out of the oven in 25 minutes. The pizza joints in town take a lot longer than that to deliver. Cost is a little less than 4 dollars per pizza on average.
Just another lasagna recipe. This is the way we make it at our house. Sometimes when I'm feeling carefree I will actually add meat to it but it really doesn't need it! I make this up in the morning and then pop it into the oven an hour and a half before dinner.

This is like a stuffed pepper but made with pattypan/scallop squash. The squash should be about the size of your fist. So let em grow. LOL.
I love veggies so I tend to throw everything into these!
Really basic and better for you than mac n cheese from a box. Makes 12 big servings. I like to add in whatever veggies I have on hand. They tend to pick them out but at least I tried!
Found a "starter" recipe on ALL RECIPES from J.Drury- Fabulous homemade Bread. I tweaked it to include only whole wheat. My pans are 9.25x5.25x2.75. Chances are your pans are smaller and you will be able to make more than 4 loaves. The original recipe made 6 -8x4 loaves. You can do all of this by hand if you so choose- I did. :) This is a great bread for PBJs and toast. Sometimes homemade bread is just good by itself but I needed to have a recipe for the kids lunches that I knew was good for them AND my budget.
A creative way to use those leftover lentils and the ever present shredded squash!
This is really high is Sodium so you would want to use low salt canned goods!! OR homemade with reduced salt methods!!
This was a lazy day for me- I am sure that you can use your own sauce BUT I didn't have time to make that all up on this day! :)

The best recipe I have found for perfectly made biscuits! I started with the Better Homes recipe and made some minor adjustments! These are not good for you but are ok once in a great while-when you've got company!!
I cheated and used a can of tomato soup this time. The hubby liked it so into the cookbook it goes!
I had an IHOP craving so I tried to copy their nutty pancakes. Not quite what I was looking for but not bad at all- I will continue working on this one.
An easy quick fix filling that adds fiber and protein to your day. Also a great way to use up those prolific zucchini.
A yummy almost gooey pasta dish that satisfies that "bad for you" pasta craving. The shredded zucchini adds color but virtually no flavor. My picky eater(absolutely no cooked veggies) doesn't complain this way.
