I'm in love with chia seeds. I admit at first they may seem a little weird, but I can't get enough. Super easy and very healthy!!!
These were a bit more cakey than I had hoped but totally delicious. I sprinkled them with sea salt and more spices when I pulled them out of the oven. Next time I will cut down on the flours, add an egg see if that produces a crispier cookie.
Using mushrooms instead of breadcrumbs makes a lighter and juicier meatloaf!
