I used low sodium pinto beans, chicken stock, and corn. You may also add 1 1/2 c. green chiles. I substituted ground turkey for chopped chicken breast and fresh spinach for collard greens.

Magic Fruit and Veggie Muffins

I have entered my modified version of this recipe. I used carrots, zucchini, and apple for the veggies and fruit. The recipe suggested those as well as spinach, pears, pineapple, and raisins for choices. Also, the recipe called for 1/2 c. white flour, 1/2 c. whole-wheat flour, 1 Tbsp. soy flour, 2 Tbsp. wheat germ, 1/2 c. old fashioned oats (or bran flakes, or a combination of the two), and 1/4 c. ground flax seeds. The recipe also called for whole milk. You would need to recalculate the nutritional value if you use the above ingredients.
