I am a cheese addict and have really REALLY missed my cheese toasties, this is a fantastic substitute for welsh rarebit and at only 300 calories is an ideal quick and simple lunch. If each slice is cut into quarters would make a great party snack at only 38 calories a piece!

I really hope this doesnt cause any offence and I hope I am not messing around with a national treasure of a recipe! I am in the UK and love the sloppy joe recipes I have found on sparkpeople, however have felt am missing out with my veg so have experimented around a little and hope I have found a good alternative that includes some appropriate veg! :) We serve this on a toasted bagel (adds 258 calories) and a side salad.
