"Minestrone" Salad

No Meat veggie heavy salad.

Baked Chicken

The ingredients in this keep the chicken moist.

Chicken Panini

I make this on my George Foreman grill.

White Bean and Tomato Salad

Drain and rinse beans. The recipe calls for Cannellini, but I had only Great Northern. I also use Navy sometimes. Any white will do.
Combine all ingredients and drizzle with Olive Oil.

THE Best Sandwich EVER!

I got this at my local coffee shop. They serve it on a croissant, but I ask for it on honey oat, which is the closest to whole wheat you can get there. I loved it so much, I shopped for the ingredients to put on my whole wheat bread.

Marinated Green Beans

My Mom and I put our heads together to come up with how to make this after I had it at a Bed and Breakfast and loved it.

I buy my fresh green beans by the pound... there isn't a lb. option on the ingredient list and I don't know how many beans are in a pound, so 50 is a guesstimate.

This is a version my Mom gave me... with no measurements! So, I'm guesstimating.

Black Bean Soup (like Chili's!)

Made the recipe on the side of a black bean can first... but it didn't taste like Chili's, so I modified it until it did.

Brown Rice and Tuna Stuffed Tomatoes

This is a twist I made on a Weight Watchers recipe. You'll have to experiment with how much tuna, cilantro and balsamic vinegar you like. I like a little tuna and a lot of cilantro and vinegar.
