Rosemary Roasted New Potatoes

Wash your potatoes and parboil until almost tender. When done, drain them, drizzle with just a little touch of olive oil and roll in a teaspoon of sea salt, a little freshly ground black pepper and the rosemary.

Preheat the oven to 220C/425F/gas 7. Put the potatoes in a roasting tray and cook in the oven for 25 minutes until golden. Or wrap them in tin-foil and throw them on the barbie for the same amount of time.

Thick & Creamy Soup for a cold winters day. Quick & Easy to make.


This dish takes 24 hours to prepare & cook but is well worth it. In France it is served with flat pasta noodles, however goes just as well with mashed or crushed potatoes or rice. This is not low calorie (307 per portion) by any means, however it is very filling and great for a special occasion. Leave the chicken whole and portion once cooked.

A quick and hearty soup which is very filling and great for a cold winters day.

Scallop & Prawn Mornay

An easy dish to make and very filling - serve with Spinach - serves two. I use individual dishes rather than a large dish to ensure portion control. You can omit the cheese and use a 1fluid oz of white wine if preferred for less calories.(20 calories)

Hot or Cold Roast Vegetable Salad

This is a great dish which can be served hot and is even better when left for a day or two and served cold. Suitable for vegetarians. Serving size is as a main course vegetable dish but will serve 8 as part of a salad. Goes with absolutely any type of meat, fish or poultry (hot or cold)


A nice flavoursome and filling soup for cold days that is quick to make - replace full fat cheddar with a low fat one for less fat content and use vegetable stock (low salt) rather than beef stock if possible


A really easy chilli that can be left all day in a slow cooker - serve with rice, tortillas or jacket potato and a side salad. For a special treat serve with the usual side dishes of homemade salsa, guacamole and grated cheddar cheese.

This is more like a moussiline, and is rather nice spread on hot toast - to save on calories serve with crispbread. extremely easy to make and really delicious.

This is a recipe which comes from France, and is a hearty filling soup and easy to make. For less calories omit the topping or replace with a few croutons.

This is for a treat or for the days when you have the need for a 'fix'. I love this warmed with a scoop of Carte d'Or light Ice Cream.

Winter Vegetable and Barley Soup

Hearty Soup for Colder Months which can be Frozen. You can even add more vegetables if you want.
