Zucchini Pancakes (Barefoot Contessa)

Here is an excellent way to make zucchinis palatable to a picky eater. These crispy pancakes really taste just like potato latkes. You could easily serve them with sour cream and apple sauce.

(I found this recipe a bit salty -- I think I'd cut the salt down to 1/2 t.)

Wegmans Mango Coconut Pork Tenderloin Al Forno

This crusted pork loin is juice and delicious. Recipe came from a Wegmans "Menu" magazine. It's very easy to make.
