This is great - low in calories, high in fiber, hearty and flavorful.

Curried Red Lentil, Kale and Sweet Potato Soup

Adapted ever-so-slightly from - I doubled the lentils (by accident - oops, but it still tastes awesome), I upped the garlic, and I subbed out the jalapeno with cayenne. Delicious! Too hearty to just be a soup course. :)

Vegan Coconut Curry Red Lentil Stew

Hearty, filling, and super-easy to make with mostly stuff you probably have laying around already. It also freezes well, so you can make a huge batch of it and keep it in single-serve portions in your freezer. It also keeps for about a week in the fridge. Good stuff!

Creamless Cream of Potato Soup (Vegan)

Winter is the time for thick, hot soup... and I make this recipe as a way to get the heartiness of cream soup WITHOUT the fat and calories. :)

Goat Cheese & Asparagus Crustless Quiche

Got this out of Vegetarian Times. If you are a strict vegetarian, like me, you'll want to double-check the goat cheese and make sure it is made with vegetal rennet. (If you live close to an Acme Market, their Culinary Circle Goat Cheese is perfect!)

Vegan Hot Pot

A hearty Asian dish that's a snap to make. You can futz with the ingredients a little to get the kind of taste you want (for example, I usually use a little more rice vinegar because I like it a little tangy!).
