Kim'sTortilla soup

This makes a huge big pan full of good nutrient rich soup. I make my own stock using a whole chicken with onions carrots celery. But to simplify things I just used the broth and roasted chicen. I completely defat my stock. This recipe is actually the quick version. If you can't find the Everglades cactus dust. Use a seasonig of your choice that has paprika and mesquite in it.

Chocolate cherry mint martini

Is anything better than a good martini?!! Some things are non negotiable and a good martini when having a party is one of them. So I created this one to share and when its gone. NO MORE BOOZE! Keeps me in my calorie range and behaving too! You can substitute any flavor. I often use blackberry stoli to change this up. Its the measurements that count here. ENJOY

smashed cheesey baked potatoe

My way of having a baked potatoe without tons of butter and sourcream! I realized how much I was consuming when I actually smashed this all up in a bowl. Wow, thats alot of tater! I split it up with my son and everyone is happy!

Kim Japanese Steakhouse Fried Rice

My version of the rice they make at my local Japanese Steakhouse. The Key is the grill!! They give instructions at our steakhouse and the chef said this was the key! Also cook rice ahead of time and cool.
