Jessica's Reduced-Sugar Confetti Jelly

Makes about 6.5 Half-pint (1 cup) jars of jelly.
Jelled VERY quickly so I will use at least half the sugar next time.
Uses: Glaze roasted chicken; PB&J; pepper jelly vinaigrette, biscuits, cornbread

Steak Fajitas

After I grilled the flank steak, it only weighed 1 lb. 1 oz. I bought a 2-pack of flank steaks from Sam's and estimated 1/2 the weight on the outside of the package for each. Either the Sam's weight was off or the steaks cooked down that much.

Black Beans with tomatoes

Good base for black bean soup. Can be used for dip, with quesadillas, fajitas, burritos, etc. Good with salsa and fat free sour cream.

Spinach, Mushroom, and Artichoke

Double the first 7 ingredient and use as half as a vegetable saute side dish. Then, use the rest for this recipe.

Cornbread Dressing

Used 1/2 Recipe Cornbread from Spark or 1 Regular Recipe from cornbread mix.
