This is a South Beach "makeover" of a casserole my family loves. Basically, I swapped out the high fat and high carb items for more diet-friendly versions. It's part pizza, part spaghetti and ALL comfort food! This makes an enormous batch, so I usually freeze some of it to be reheated later. All of the ingredients are cooked before they are put in the casserole, so it is easy to defrost and reheat.
Incredibly filling and easy to make. Low-cal and low-carb! This makes a great lunch or starter course. For a heartier meal, you could add some pre-cooked chicken breast meat and veggies (asparagus or peas would be delicious).
