Grilled Hummus Sandwich (vegan)

Definitely one of my favorite comfort foods. It's my go-to vegan substitute for a grilled cheese sandwich. I don't care for the taste of margarine, so "buttering" the bread with a little bit of the hummus, creates a nice crunch on the outside of the sandwich (without a nasty greasy feel).

Garlic Green Beans (vegan)

A quick, delicious, healthy version of an old favorite.

Strawberry and Spinach Salad (vegan)

This salad is not only delicious and pretty, but also has almost 800 mg of potassium per serving, and takes less than 5 minutes to prepare.

Lentil Shepherd's Pie (vegan)

A lot of chopping and takes a bit of time, but totally worth it! Yummy comfort food. If you use canned beans, buy the no salt added to keep the sodium content down. I did not include the soak and cook time for the dry beans as I keep cooked beans in the freezer ready to use.

Chock full of nutrients, one serving has over 100% of your RDA for vitamin A and C, 15g of fiber and 12g of protein.

Vegetable Burgundy Stew w/ Tofu (vegan)

This stew is adapted from the Beef-Less Burgundy Stew with Herb Dumplings @ I made it with the Herb Dumplings, but found them too sweet (I used the Healthy Heart Bisquick). I like the stew better without the biscuits. I added potatoes to the stew, so potatoes and biscuits is probably overdoing it anyway.
