Roasted Harvest Vegetable Soup

The beautiful thing about this soup, is that you can adjust it to what is in season, what you have on hand, or what you are craving - I like to replace the parsnips and turnips with sweet potato - I also like to place some whole cloves of garlic to roast in the last 10-15 minutes with the veggies (be sure to toss them in olive oil as well). Tastes great served with sour cream or Greek yogurt and crusty bread

Veggie Cakes

these veggie cakes can be made with any vegetables, it is fun to play around with the flavors - root vegetables work especially well, as do zucchini and other squashes


I absolutely adore this Egyptian dish - I first saw it on an episode of No Reservations with Anthony Bourdain, I searched out recipes for it, including video versions, and after many trial and error runs, this is my own personal recipe for the Egyptian "fast food" - it can easily be modified to be Vegan by making sure the pasta that you use is egg-free

Buckwheat Dimples (waffles)

I named these waffles in honor of my little boy's dimples :) - it is a healthy variation of my old waffle recipe that replaces the oil and is dairy free
