This was made with left over ingredients I used last time in another recipe. It was actually all chopped up. Ingredients were added at different times from hardest to softest to allow them to cook, but not get mushy.
Using the super food quinoa, (KEEN wah ) this recipe is open to many personalized variations. The vegetables can be changed according to what you have on hand and also according to your personal tastes. The dressing recipe I used is also given below.
1.5 cups quinoa rinsed well
3 cups water or broth
.5 cup Basic Salad Dressing ( see recipe below )
one orange, red or yellow pepper, diced fine
1/2 of a cucumber, diced fine (@1/2 cup)
1/2 cup finely diced red onion
5 green onions with 5 inches of tops, chopped fine
1/4 cup finely chopped fresh parsley
1 Tbsp dried dill weed
After rinsing the quinoa, add the broth or water to it and bring it to a boil in the pot. Reduce and simmer for @ 15 minutes, as in making rice, until the water is absorbed. keep the pot covered. Place the quinoa in a large bowl to cool slightly and then add the 1/2 cup of salad dressing and the remaining ingredients. Add more dressing or seasonings to taste. Change the vegetables for different varieties of flavor.
Approximately 10-12 servings
Dressing1/4 cup red wine vinegar
1/2 cup olive oil
1/2 teaspoon dry mustard
1/2 tsp fresh ground pepper
Shake together and refrigerate. Shake before using.
1/2 teaspoon Mrs. Dash Original spice seasoning
