Creamy Carrot and Parsnip Coup

Melt the butter in a large pot. Add the chopped onion and cook for about 3 minutes. Add the chopped carrots and parsnip and cook for about 15 minutes. Stir in 1 tbsp ginger, 1 tsp orange zest, and add the stock. Simmer for 30-35 minutes. Let cool for about 10 minutes and process until smooth in a blender. Reheat, stirring in the milk. when hot, serve. Salt and pepper to taste.
