Makes a great veggie burger or just on it's own drizzled with a yogurt dill sauce
Part stir-fry, part scramble, this dish packs in the fiber and protein. You can use soy sauce if you do not mind the extra sodium instead of the liquid aminos. Great post-workout meal.
Even the anti-tofu members of my family liked this. If you cube up the potatoes and tofu small, you really get more potato texture than tofu.
Although high in calories, this nutrient packed smoothie brings alot to the table. I like to have one after workouts, and for when I need a boost. It really helps you feel balanced.
This is a healthy take on the Chile Relleno that I came up with. Instead of coating it any frying it, I stuffed it with veggies and a little ground turkey, topped it with some lowfat cheese and baked them. In order to keep them from falling apart, I put the stuffed chilies in a foil pouch and baked them. You can either eat them straight out of the pouch or, what I did was slid it out onto a whole wheat tortilla and ate it as a burrito. Yum!!

Simple to make. Tasty for a quick lunch, wrap it up in a whole wheat tortilla, or toss in some cooked brown rice.
Tasty! I like the flavor of the red potatoes, especially when roasted. You can roast them until just soft, or longer to get more crispy ones, like I prefer!
The balsamic gets syrupy and sweet, a nice flavor on cauliflower, which doesn't have much flavor on it's own. Very pungent while cooking though!
Adding cheese to the filling and on top is very tasty, but will bring up the calorie count, fat, etc. I made some each way the other night, and found that the ones without the cheese were just as good!
Great for cold nights! This "stew" will warm you up from the inside out!

This recipe takes good old fashioned comfort food and makes it good for you! Make sure to pick large, round peppers for this. They are better for stuffing. You could also find 8 small round peppers. Add a salad, and you have a healthy, filling dinner!
My son who won't touch spinach with a ten foot pole loved this lasagna, in fact, he didn't even realize there was spinach in there!
This recipe was in a Taste of Home issue a few years back. I omitted the butter and used olive oil for a healthier version. It is so yummy, I have to share it! Pair it with some brown rice, and you have a great low fat high protein dinner!
