Pumpkin smoothie

A nice fall treat to start the day with. Can be made in advance and frozen for future enjoyment. Also doubles as a nice pudding that can be served with ginger snaps

Scrambled Tofu

Use it as an egg replacer in breakfast dishes. It's completely vegan and totally an explosion of awesome in your mouth! I got this idea from a book called "The Joy of Vegan Cooking" and made some modifications to it to enhance the flavor.
