I came up with this recipe a few years ago as a quick treat for my parents. Multigrain pasta and reduced fat feta make it healthier than traditional pasta and whole fat feta. Oven roasting the shrimp gives it a great flavor, or alternatively, use already cooked shrimp if you want to save time.
I am a big burger fan, but I've found that regular ground beef is too greasy for me now a days. Buffalo meat is a lean and tasty alternative. These burgers make for a lighter dinner or filling lunch, and are delicious with a side of peppers and mushrooms.
A delicious side, or, with a double portion, a light meal.
