This is a hearty Vegan stew that combines a lot of leftover dried beans with some vegan sausage (couldn't find the exact brand, so I used Morningstar to calculate the nutritional info) and lots of spices.
You can top with grilled corn, a drizzle of olive oil or diced tomatoes and yellow onions to change up the flavor. This is an easy Sunday night fix that gets you ready for a busy week. I store half in the fridge and freeze half for another week.
