Macaroni Salad with lots of veggies and a reduced amount of mayonnaise due to the use of Greek Yogurt. Flavorful and great served with any BBQ'd meats.
This was an old recipe off of a Herr's Tortilla Chip bag (a childhood favorite of my husband's) that we have updated and made more healthy. We use Trader Joe's Salted Tortilla Chips that have 4 grams of fiber per serving, 93% lean Ground Turkey, 1% Cottage Cheese (could even use fat free if you liked), and 2% shredded Mexican Cheese. Still has all the flavor of the original, but with a bit lower calorie and fat content.
A blend of ketchup, Greek yogurt, and fresh lemon juice and horseradish are the perfect balance of creamy, tangy and spicy to top your favorite seafood recipe.
Have delicious crab cakes and get your veggies too! These low calorie and low fat crab cakes have over a gram of fiber each. Try them with my recipe for Creamy Cocktail Sauce.
We just love our new food processor and using up the ends of our loaves of whole wheat bread is so quick and easy and a great addition to this recipe. Breaded Eggplant rounds, topped with the healthy jar sauce of your choice (we like Aldi's All Natural Tomato Basil by Grandessa), and some part-skim Mozzarella make for a wonderfully crispy baked, not fried, eggplant parmesan even the kids will love!
This is a great veggie-full sub for the flavors of homemade stuffing! Whole wheat bagels and parmesan cheese make up the crunchy topping. Good recipe for using up all the squash that is crowding your garden too!
These cookies are super delicious - Oatmeal, Egg Substitute, grated Yellow Squash, Dark Brown Sugar & Butterscotch Morsels come together to make your mouth water! Try subbing a second helping of yellow squash for 1/2 of the Heart Healthy Buttery Spread to decrease fat content. May also be able to decrease sugars a bit as well.
What a super way to sub out a huge portion of the fat in a recipe ~ by using protein, fiber and nutrient-rich BEANS! Nice fluffy, chewy cookies that even kids will love.
Was looking to make Mango Kiwi Salsa, when the grocery store only had nectarines. Well it was a happy accident, because this turned out wonderfully! Served it over grilled Swordfish steaks - and can't wait to eat the leftover with multigrain tortilla chips!
This burger has fantastic flavor, great texture, and won't fall apart on the grill! Black Beans, Oats, Ground Almonds, Walnuts, Red Bell Pepper, tons of Mexican flavor....and even some ground Flax for good measure!
This is one of those, throw in the kitchen sink sort of meals. A great meal to make when you've got lots of veggie odds and ends. Would also be good using diced zucchini or green beans and any spinach or greens you have onhand. I used canned red beans, smoked turkey sausage, onion, fresh chili pepper, jarred jalapenos, celery, carrots, a fresh tomato, and beet greens I had onhand. Serve over rice, or eat alone with some nice crusty whole grain bread!
These are easy to make and delicious! Black beans, salsa, cream cheese, green onion, diced pepper and cilantro come together to make an appetizer even the guys will love!
These are a great way to get your fiber and antioxidants in a cookie! I make these with a Small Size Pampered Chef Cookie Scoop, thus the 78 cookies per recipe. My 5 year old loves these! And they would be amazing with some dark chocolate chips added. Great chewy texture with the added crunch of the flax seeds and sweetness of the bananas. For more of a peanut butter flavor, added chopped peanuts!
This version is with full on cream cheese frosting, but would be great with just a drizzle of a cream cheese glaze to decrease the sugar content. Would make great muffins as well. Without the frosting each serving is under 200 calories. Lots of veggies, walnuts and whole grain flour in this recipe - enjoy!
Had this at an AMAZING Indian restaurant in downtown Poughkeepsie, NY and have been dreaming about it ever since! Couldn't wait to get home to make it!
I make this and bottle the leftovers to use for about 3 more servings of my Chickpea Cauliflower Coconut Curry recipe (also on Sparkrecipes.com). This can be used in any Indian recipe calling Garam Masala. This is the easy version because it uses ground spices...if you have whole and have the time to toast and grind them, that is ideal!
Lite Coconut Milk and a touch of brown sugar sweeten up the lightly spicy garam masala seasoning. This was a hit with friends.
Added Spinach & Whole Wheat Pasta to another member's recipe and it turned out great! Such a tasty sauce with a bit of a Cajun kick.
I was looking for a rich chocolate cake in which I could include grated veggies of some sort. Found this recipe and changed it a bit by reducing the sugar, subbing ground flax seed for two of the four eggs, and 3/4 cup of applesauce for part of the oil. The result was a really moist cake that everyone has raved about...and we can eat it with none of the guilt!
