I made this for lunch today. It's very good! I've never made a potato in the microwave before--it's very convenient. I made couple of changes--substituted in lemon pepper, added garden-fresh chives, and used a pinch of Parmesan instead. Also used fat-free plain yogurt instead of sr crm. Will remake!
