If the salsa is mild, I'd use an envelope of reduced-sodium taco seasoning to spice it up a bit. I also like to mix in a chopped sauteed onion and minced clove of garlic with the rice; they help to bring out the nutrients.
Unbelievably yummy. We served it on one serving of tortilla chips with a litle low fat sour cream.
