Yummy. I did alter it though; 1/2 c unsw applesauce in place of the canola oil; 2 Tbsp honey in place of the Splenda; 1/2 c crushed pineapple with juice instead of the chunks; replaced pecans with 1 Tbsp flax seeds. My version could be sweeter, but I liked it. Only 170 calories. 12 large muffins.
