Very good. Per Uncle Ben's nutrition info 1 package is equal to 1 serving which is 1 cup of rice. I used 1 cup of plain brown rice. I didn't have green onions and they are def needed. I made Emeril's Simple Balsamic Vinaigrette and it was delicious. Topped with some grilled chicken.
Ehh Uncle Ben's rice. I'll be swapping that item out...too salty and poor choice nutritionally. Otherwise it looks like a great salad.
Calories per serving indicate you are having 1/2 cup of rice. With 4 servings that makes 1 cup raw rice or 2 cups cooked rice. Hope that helps determine how much rice to make if not using prepackaged rice. :)
