I make something very much like this, but don't use broth. It has too much sodium (3,568.4mg per serving! Yikes!) I use a whole chicken skinned/cut up; the bones make the broth. I remove the chicken from the bones, cut it up (or shred) and put it back int he stew. I always add peas and carrots.
