Wonder if you can replace the sugar with Splenda?
Instead of Sugar I use Splenda's Baking Blend Vanilla.
What a tasty treat this is. The kids loved these, even though I used half of the sugar. I've also subbed almond milk and there was no noticeable difference in flavor.
These were icier than real fudge pops, not enough fat.

can Splenda or Stevia be used in place of the sugar?
Recipe sounds interesting but why do you need to add salt? Salt is added to to many foods as it is. I don't think it is necessary in this recipe. Most of us consume too much salt as it is.
I have made them with slim milk and lowfat jello pudding mix too also good !
If you have a hand blender, it makes quick work out of the mixing of the cold milk, cocoa and sugar.
These popsicles were great, my children loved them and said they had extremely good flavor. I did reduce the sugar to 1/4 cup and no one noticed. :)
