I'm not a fan of processed cheese, so I substituted low-fat Greek yogurt.
I made this tonight for my family and added two poached chicken breasts to it to make it a more complete meal. Everyone in my family (two year olds included!) enjoyed it, even though my hubs added more Velveeta to his. I have to admit, it could be cheesier, but then it would be higher in calories!
