I made these last night. Instead of using milk and cheddar though, I used 1/4 cup of light sour cream, 3 tbs smart carb butter, 1/4 cup of mayo and parmesean. I also didn't bake it for 30 minutes afterward. My whole family loved it and my husband even said he preferred it to mashed potatoes!
