I've always made a too-moist banana muffin before this recipe - it's just delish! Good banana flavor and spraying each paper liner enabled the baked low-fat muffin to easily pull away from the liner. I did add about a half-cup of chopped nuts - still a lo-cal, delicious muffin. That's rare!
