Whole Wheat Finnish Pancakes

Ingredients
In a 9x13 pan, melt:3 tablespoons butter(be careful that this doesn't burn)In the blender combine and blend at high speed for 30 seconds:2 cups 2% milk4 eggs1/4 cup honey1 tsp. vanilla1/4 tsp. salt1 cup whole wheat flour - I prefer to use pastry wheat
Directions
Preheat oven to 400.

After butter has melted in the oven, and you have blended up your ingredients, just pour the contents of the blender over the melted butter in the pan.

Bake for 20-35 minutes, checking for done-ness with a knife in the center.

Cut into 12 squares and serve with fruit or syrup.

* You could also add some almond or orange/lemon extract for an additional twist of flavor - depending on the season.
