Garlic Artichoke Dip

1 large onion, chopped4 Tbsp minced garlic1/2 tsp dried oregano1/2 tsp dried thyme1 tsp olive oil1 can (15 oz) cannellini beans, rinsed & drained1 can (14 oz) water-packed artichoke hearts, rinsed & drained1 Tbsp lemon juice1/2 tsp salt1/8 tsp cayenne pepper
In a small nonstick skillet, saute the onion, garlic, oregano and thyme in oil until tender. Remove from the heat; cool slightly.
In a food processor, combine the beans, artichokes, lemon juice, salt, cayenne and onion mixture; cover and process until pureed. Transfer to a small bowl. Cover and refrigerate at least 2 hours before serving. Serve with vegetables and/or pita chips.
