Jumbo Banana Oatmeal Muffins

1 c. dry old fashioned oats1 c. nonfat milk1/2 c. mashed banana1/4 c. brown sugar1/8 c. sugar free maple syrup1 T. ground cinnamon2 egg whites1 c. whole wheat flour1 tsp. baking powder1/2 tsp. baking soda1/2 tsp. salt1 tsp. cinnamon (optional)1 T. chopped walnuts (optional)
Mix oats and milk and allow to stand for 1 hour.
Add banana, brown sugar, syrup, 1 T. cinnamon, and egg whites to the oat mixture. Stir until egg whites are well combined. Add wheat flour, baking powder, baking soda, and salt. Stir until just combined. Pour mixture into muffin pan. (I use a silicone jumbo muffin pan with six cups. If you don't use silicone, you may want to spray the muffin cups with nonstick spray.)
Mix 1 tsp cinnamon with walnuts if desired. Sprinkle on top of uncooked muffins.
Bake at 400 degrees for 20 minutes. Remove from pan promptly.
These are also delicious topped with a little nonfat vanilla yogurt!

What a terrific breakfast. I added unsweetened applesauce in place of some of the banana and threw in some ground flax seed, and a few craisins and raisins. I didn't have the jumbo muffin forms, so made this into small muffins and cut the baking time. They were great split and toasted! - 4/12/10

These were great. I used SCOTTY51's idea and did small muffins so I could add a little extra to please the kiddos and hubby. I added raisins to a couple, walnuts to couple and the rest for my daughter and I. In the smaller pan it made 12 small muffins. The whole family enjoyed them. Thank you! - 6/21/10
