Grilled Eggplant Wraps

1 large eggplant (1 1/4 - 1 1/2 lbs)2 medium tomatoesolive oil spray1/4 cup tahini1 cup 0% fat greek yogurt3 cloves garlic, minced3 tbsp lemon juice1/4 tsp kosher saltWhole Wheat Middle Eastern Flatbread2 cups fresh baby spinach
Preheat grill to high (450-550 degrees). Slice eggplant into 1/2" rounds and quarter the tomatoes. Spray eggplant and tomatoes with olive oil, and grill until tender; about 6 minutes. Cut tomatoes in half.
Whisk together tahini, yogurt, garlic, lemon juice, and salt.
Top each warmed flatbread with a spoonful of sauce, layer on spinach, eggplant, and tomatoes. Roll to eat.
Makes 4 sandwiches.
