Soft Creamy Custard

Ingredients

2 cups evaporated skim milk1 cup egg substitute3 Tbsp. cornstarch1/2 cup sugar2Tbsp margarine1 tsp cinnamon1 tsp vanilla
1. In a blender, combine milk egg substitute, cornstach and sugar. Blend until smooth.
2. Pour the mixture into a double boiler over simmering water. Cook, stiring constantly, until the mixture thickens. Remove from heat and add the remaining ingredients.
3. Pour the custard into a bowl. Place a sheet of waxed paper or plastic wrap over the bowl to prevent a skin from forming over the custard.
4. Refrigerate several hours.
