Gluten-free carrot raisin muffins

Ingredients
1/2 cup amaranth flour1/2 cup brown rice flour1/4 tapioca flour1/4 potato starch1/8 tsp xanthum gum1 tsp unbuffered Vitamin C powder OR 2 Tbsp lemon juice1 tsp salt1/4 cup sugar6 Tbsp flax seed meal1/2 cup raisins1 cup grated carrot1 small can crushed pineapple (do not drain)1 large egg1/4 canola oil1 tsp vanilla1/4 tsp cinnamon1/4 nutmegabout 3/4 water
Directions
Preheat oven to 375°. Combine dry ingredients in a mixing bowl. Stir in carrot and raisins. Add pineapple, egg, oil, vanilla, lemon juice (if using) and water. Add enough water to make mixture like thick cake batter. Spoon mixture into greased muffin tins. Bake for 20 minutes or until done.
